Is gluten free healthier?

Im often asked about gluten free foods like gluten free pancakes, penne and chocolate brownies and are they in or out.

In short no…thats excluding sugar and processed food…gluten free is out.

Heres why…

Gluten is a protein found in wheat, rye, barley and triticale that, when water or liquid is added to it, makes an elastic dough. Gluten free flours on their own do not have this elasticity and typically produce a much denser product, so blends of different types of grains are used to create gluten free flour mixes with a more versatile consistency that will work well in the same applications as wheat flour.

Research indicates that up to 1/3 of humans could be gluten sensitive or intolerant, with these people suffering inflammation and reactions such as bloating, acne, dermatitis, acid relux and celiac disease.

So for a start this is a great thing to eliminate from your diet.

But as mentioned in this extract gluten free foods still contain different types of grains which when eaten cause glucose levels to skyrocket triggering insulin release into your bloodstream to assist storage of glucose or glycogen in your muscles or converted into fat

So in summary gluten free and grains are out.
